Barley Arancini

Remember our Mushroom Barley Risotto?? Yea well, we loved that idea so much, we decided to take it a step further and made arancini with barley instead of the traditional arborio rice! Yay!

We love arancini. From where we come from (Singapore), this almost doesn’t exist unless you look really hard, so some of you may not know what they are. Essentially fried risotto balls, croquette-style, they can be made with or without a filling (usually cheese). It’s a particularly great idea for using up leftover risotto (or a perfectly good excuse to make risotto :P)
